Roast in the centre of a pre-heated oven, gas mark 5, 375°F (190°C), for 20 minutes per lb (450 g) plus 10-20 minutes extra – this will be 1 hour and 50 minutes to 2 hours for a 5 lb (2.25 kg) bird. Baste three times during the cooking time.
Cooking time: start roasting pork at a high temperature (240°C/ fan220°C/gas 9 or as high as your oven will go) to get the heat through to the centre of the joint, and get the crackling off to a good start. After 20 minutes, reduce the temperature to 180°C/fan160°C/gas 4 and continue to roast for 25 minutes per 450g.

Ingredients
2 tbsp olive oil
500g leeks, finely sliced
2 plump garlic cloves, finely sliced
2 thyme sprigs, leaves picked
500g new potatoes
350ml chicken stock
200g green beans
Method
Heat the oil in a large casserole dish over a medium heat. Add the leeks, garlic and thyme, cover and cook gently for 10 minutes, stirring occasionally.
Season the chicken and place into the dish with the potatoes.
Turn up the heat, pour in the stock and bring to a simmer. Reduce the heat and allow to gently bubble with the lid on for 35 minutes.
Add the green beans for the final 10 minutes of cooking. Season to taste, then ladle into bowls. Enjoy.

Ingredients
1 celeriac, peeled and chopped
1/2 swede, peeled and chopped
1 sweet potato, peeled and chopped
500ml (17 fl oz) chicken stock
Method
Place the chicken, celeriac, swede and sweet potato into a slow cooker. Pour in chicken stock and cover with a lid. Cook on medium heat for 6 hours or low for 8 hours.

Spaghetti Bolognese is a family favourite, our steak mince will work perfectly with this simple homemade and tasty recipe.
This recipe serves 4 people and only takes approximately 10 minutes to prepare and 40 minutes to cook, it’s a favourite for us.
Ingredients
2 medium onions, peeled and chopped
1 tbsp olive oil
1 garlic clove, peeled and crushed
600g of our Lean minced beef
90g mushrooms, sliced
1 tsp mixed herbs
400g chopped tomatoes/ canned tomatoes
300ml hot beef stock
1 tbsp tomato ketchup/puree
1 tbsp Worcestershire source
Salt and pepper
350g spaghetti
Method
Put the onion and oil in a large pan and fry over a fairly high heat for 3-4mins. Add the garlic and mince and fry until they are both brown. Add the mushrooms and herbs, and cook for another couple of minutes.
Stir in the tomatoes, beef stock, tomato ketchup/puree, Worcestershire source and seasoning. Bring to the boil, then reduce the heat, cover and simmer, stirring occasionally for 30mins.
Meanwhile, cook the spaghetti in a large pan of boiling, salted water, according to packet instructions. Drain well and stir in the meat source.

The classic chicken stir fry is a quick yet tasty recipe. Cooking with only one pan, it is simple and easy to prepare. This is a basic yet still deliciously tasty meal, using our excellent chicken breasts will be the perfect addition. Serving 2 people.
Ingredients
1 tbsp olive oil
1 garlic clove, chopped
2 of our Chicken breasts
1 red pepper, seeds removed, thinly sliced
1 tbsp soy sauce
60g mangetout or green beans
200ml chicken stock
2 nest of egg noodles, cooked according to the packet instructions
Method
Heat the oil in a large frying pan or wok and fry the garlic and chicken, until cooked. Add the pepper to the pan and stir-fry for 2-3 minutes.
Stir in the soy sauce, mangetout and chicken stock. Continue to stir-fry over a medium-high heat for 3-4 minutes, or until the chicken is cooked through. Add in the cooked noodles and stir to combine.

Want to try something a little different with a Pork Loin? Then why not try this delicious recipe. Serves 6 people, It will taste great with your choice of vegetables and potatoes.
Ingredients
300ml Guinness
200ml clear honey
250g light sugar
1kg loin of pork
Splash of white wine or water
Method
To make the glaze, put the Guinness, honey and sugar into a pan. Reduce by almost half, to form a sweet syrup glaze, then allow to cool.
Heat oven to 200C/fan 180C/gas mark 6. Season the pork with pepper and salt, place on a baking tray and roast for 20mins. The turn the heat down to 160C/fan 140C/gas mark 3.
Remove the pork from the oven and brush all over with the glaze. Cook for a further hour or until cooked thoroughly.
Remove the pork from the roasting tray and leave to rest.
Cook your vegetables and potatoes according to their packaging and serve with the Pork Loin Joint.

This Turkey chilli is a hearty dish with plenty of flavour. Serving 8 people, it’s great for the whole family.
Ingredients
1 1/2 teaspoons olive oil
500g (1 1/4 lb) minced turkey
1 onion, chopped
450ml water
1 (700g) jar passata
1 (400g) tin kidney beans – drained, rinsed and mashed
1 tablespoon garlic, minced
2 tablespoons chilli powder
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Method
Place the turkey mince in a wok, and cook until evenly brown. Stir in the onion, and cook until tender.
Pour water into the wok. Mix in passata, kidney beans and garlic. Season with chilli powder, paprika, oregano, cayenne pepper, cumin, salt and pepper.
Bring to the boil then reduce heat from high to low, cover, and simmer for 30 minutes.

A simple to prepare sausage casserole dish. Only talking 5 minutes to prepare and 30 minutes to cook, this is a simple yet tasty dish. Serves 4 people.
Ingredients
drizzle of olive oil
1 onion, finely sliced
8 sausages
3 garlic cloves, finely chopped
750g Vegetables
400g can chopped tomatoes
500ml pork or beef stock
few sprigs thyme
Method
Cook the sausages in a wide saucepan for 5 minutes, then stir in the onions until they are soft and the sausages are brown.
Add the garlic, cook briefly, then add the vegetables, tomatoes, stock and thyme and bring to the boil. Simmer over a gentle heat for 20-25 minutes until the sausages are cooked through.
Season with black pepper and serve with pasta.

This classic Italian dish is quick to prepare and using our delicious bacon will add great flavour to the dish. Serves 4.
Ingredients
400g spaghetti or other pasta
250g bacon chopped
4 eggs lightly beaten
Large handful of parmesan grated
Finely chopped parsley
Salt and pepper
Method
Boil the pasta, until soft.
While the pasta is cooking, fry the bacon in a large pan.
Once your pasta is cooked, remove from the heat and stir in the beaten eggs. Make sure the pasta is fully coated.
Add the remaining ingredients saving some parmesan and mix well.
Serve with a sprinkling of the reserved parmesan.

The simplest of recipes, but brilliant for someone with a busy working day. A few minutes’ preparation in the morning and you can have a delicious one-pot dinner in the evening.
Ingredients
1 1/2 lb beef steak
3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon vegetable oil
1 1/2 cups sliced onions
1 can (14.5 oz) diced tomatoes, undrained
1 teaspoon sugar
garden vegetable medley
Method
Sprinkle both sides of steak with flour, salt and pepper. Heat oil over medium heat until hot. Then cook the steak in the oil for 6 to 8 minutes, turning occasionally.
Place onions in slow cooker. Top with the steak and tomatoes.
Cover and cook on a Low heat setting for 7 to 9 hours or until the steak is tender.
Cook the garden vegetables according to their packet. Then stir into beef mixture.
Serve and enjoy.
